  1. Finely chop your onion, tomatoes and chile (make sure to remove the seeds to keep the heat level down or skip the chile if you don’t want the heat at all) and bring to a pan with hot oil.
  2. While your veggies are frying, crack your eggs in a small bowl, season with salt and pepper and whisk them with a fork until the yolks are dissolved.
  3. When your veggies begin to brown, add your egg mixture to the pan and let them cook until they reachyour desiredtexture.
  4. Finally, heat up your tortillas and serve your eggs on them to make your tacos.
  5. Splash your tomatillo salsa on top and enjoy!
