  • 10 apples (approx. 1 kg)
  • 1 Vera Mexicana Vanilla Bean
  • 1 tsp of cinnamon
  • 2 tbsp sugar
  • Macaroons or sugar-roasted breadcrumbs
  • 250 ml fresh cream

Description

Good ol' Danish apple cake recipe: Perfect for those chilly winter afternoons where you just want to snuggle up on the couch with a good movie.

Danish apple cake is actually more of a trifle made from apple sauce and sugar roasted breadcrumbs (or crumbled macaroons) layered in a bowl with freshly whipped cream on top - some people also add a dollop of jam to the layers. And you know what goes great with apples? Mexican Vanilla! It's woody notes plus the creamy and sweet flavor profile is perfect with crisp, juicy apples in an apple sauce.

Steps

  1. Peel and dice around 10 apples.
  2. Butterfly the Mexican vanilla bean, scrape out the seeds and mix it with 2 tbsp of sugar.
  3. Add the vanilla sugar, apples, and 1 tsp of cinnamon to a big pot with half a cup of water.
  4. Let it simmer with a lid for about 30 minutes (stirring occasionally) or until it has turned into a sauce with some chunks of apples remaining. Let cool.
  5. Crush some macaroons or roast some breadcrumbs with as much or as little sugar as you'd like (see author notes).
  6. Whip some fresh cream until you can turn the bowl upside down without accidentally giving yourself a DIY hair mask.
  7. Layer the cake with apple sauce and then macaroons/breadcrumbs (make as many layers as you want) and finish off with a layer of whipped cream. ¡Buen provecho!

Author notes

This recipe will give you more than enough apple sauce which you can put in the freezer in smaller portions and defrost when needed. If you want to make your own topping for the cake, you can melt 50 g butter in a pan. Add 100 g breadcrumbs and 50 g sugar and stir until crispy.
